Here’s a quick and easy dessert you can whip up the night before your picnic dates this summer; lemon butter cookies.
I used Jamie Oliver’s recipe and they turned out just great. Fragrant, soft and chewy – every bite such a delight.
I didn’t dust the cookies with sugar afterwards for practicality sakes, but I definitely would otherwise.
If you’re after a picnic appropriate dessert, do give these a go. You won’t need to worry about them melting like ice creams, serving like cakes, or peeling paper off of muffins or cupcakes. Handy, isn’t it?
C’mon, and summer and lemons just go hand in hand too, no?
**I got tagged/nominated for the liebster award by Sarah at Flour and Spice last month. For personal reasons, I won’t be partaking in everything that the tag asks me to do. However, I am going to pass the award along to one of my favourite bloggers: Hannah at musingnude. She’s such a phenomenal writer, thinker and a mother who has a soft spot for lemony desserts, so I dedicate this post to her**
