Weekend Baking: Banana Chocolate Chip Muffins

Zero fuss is the golden rule for any baking in summer, so instead of making the mini banana chocolate chip muffins like last time, I opted for this recipe and made 12 large muffins using the neglected spotty bananas that no one wanted to eat.

Mhmmm – Delicious.

Banana Chocolate Chip Muffins Recipe

What you’ll need:

3 ripe bananas, mashed
½ cup sugar
100g butter, melted
1 free range egg
2 tbsp milk
1½ cups flour
½ tsp baking soda (original recipe uses 1 tsp)
1 tsp baking powder
1½ cups chocolate chips

  1. Preheat the oven to 190°C.
  2. Pop everything into a large bowl and mix well.
  3. Spoon batter about 2/3 full into each lined cup.
  4. Bake for 25-30 minutes.  Done!

FYI, if you don’t cool them down completely, the paper lining won’t come off nicely. I speak from experience.
