Weekend Baking: Banana Chocolate Chip Mini Muffins

Om nom nom nom. I baked these bite-sized banana chocolate chip mini muffins for a birthday party tomorrow. S ate one two for quality control. They passed Q.C. like this:

Gigi: So?
S: nom nom nom
Gigi: What’cha think?
S: nom nom nom
Gigi: (Annoyed) Yum or not?
S: (Holds up two thumbs) Can I have another one?
Gigi: *rolls eyes*

Happy ‘Straya day to all the Australians by the way! I should have added some white and blue sprinkles to go with the Union Jack liners. These mini muffins would have been the perfect little “Ozzie flag” treats for the occasion.

FYI, I used this recipe minus the cocoa to keep the batter light. It’s actually a recipe intended for baking large muffins, but it worked just fine as mini ones too. Of course I was left with some batter after filling my mini muffin tray, but I was able to bake four large muffins with it.
